Sweet talk with Pierre Hermé: France’s ‘Picasso of pastry’ on what makes a great pâtissier

In this edition of Entre Nous we welcome Pierre Hermé. His name itself is synonymous with high-end French pâtisserie. Vogue magazine has dubbed Mr Hermé the “Picasso of pastry”, and unsurprisingly he’s also been called one of the most influential French people in the world. He tells us what makes a great pâtissier, or pastry chef.
